Milagai Podi Powder | Podi Powder | Idaly Powder | Gun Powder - A Traditional South Indian Condiment
Podi Powder....Milagai Podi Powder, idaly powder or akka dry chutney powder....all are different name to say but...Podi remains same. Podi powder is staple spice and pulses blend mixuer in South Indian delicacies. It serves along with Idaly and Dhosa both.
Method of preparing Podi Powder akka Gun Powder are numerous ways. Majority in all South India region this type of powder people used to make at home as it is also steple powder of South Indian food specially with rice, ghee and sometimes with Dahi (Curd).
Indian spices are always famous for their aroma and taste since decades. Spice mixture can store in air tight container for long time. As per requirement I used to prepare all type of spice blends by own as I do not prefer readymade packet powder which has no fresh and authentic taste. I have learned this recipe from my friend's mother, as always I am fan of South Indian Cuisine and traditional food system.
I personally love to have this podi powder with fresh and hot steam Rava Idaly and sometimes with Crispy Idaly why so??? because once you will try this podi powder recipe and eat with hot steam idaly that will give extravagant flavour.
Every house has own recipe variation for preparing spice blend. While preparing such type of spice mixer few things need to take care for perfect taste and increase long life.
- Let the heat kadai, add Chana Dal separately, roast dal on low medium flame until turns into light golden brown.
- Similarly Urad Dal, Red Kashmiri Chilies, Tamarind, Roasted ChickPea Dal, Curry Leaves, sesame seeds, Coconut all ingredients do dry roast separately one by one on a low medium flame until light golden brown colour.
- Let the aside all the roasted ingredients get cool completely .
- Now add all roasted items into mixer jar, grind nice coarse powder.
- Store Idaly Podi Powder into Airtight Glass Jar or Steel Jar. It will remain fresh till several weeks. For freshness of spices prepare small batch.
