Khajur Balls ( Dates Ball) - Winter Bites!!!!





Winter has started to spread cold waves!!! To deal with cold waves here is very delicious, mouth watering and nutritive winter bites presenting and that is " Khajur Roll or Khajur Balls (Dates Ball)" which is completely #SugarFree and most healthiest version of winter sweet which actually boost energy and maintain blood level in body specially for anemia patient. 

I made this Khajur Roll with a little different touch of recipe to make more healthy rather than my grand mother traditionally made as per her taste and skill.

Personally I love Dates very much. Dates have numerous benefits for everyone.Few benefit I have noticed personally on my self after using constant. 

Benefits of Dates (As per My Personal Study and experiments on My Self and my grandmother)

1. Increase iron level in blood.

2. It helps to regulate bowel system as it has high amount of fibers and also helps to reduce weight. It has property to cure constipation problem.

3. It reduce weight why so? because it has property to keep you full till long and one magical benefit of Dates is, calories out of dates does not store as fat, but it directly converts in to energy which boost your body to do work energetically and keep moving.

4. Regularly having 3 to 4 piece of Dates in morning, changes skin tone, gives nice shiny skin because of rich source of Vitamin C and Vitamin D and Anti ageing property.

5. Dates are known for their rich concentration of antioxidants which can be beneficial for your cardiac and pulmonary health.

6. Many research studies have shown that it is helpful to reduce the risk of diabetes, Alzheimer’s disease, and certain types of cancer.

7. Dates can strengthen your bone and make it strong which reduce the chances of bone fractures due to osteoporosis.

8. Because of Natural sweetness of Dates it reduce craving for unhealthy sweet products. Best substitute of Chocolate as per diet purpose.

9. Also it improves nervous system and maintain excellent health to have daily 3 to 4 Piece of dried Dates.

Now lets have a quick glance to Dates Roll Recipe akka Khajur Pak....

Ingredients  

500 Gm Dates (Without Seeds)

50 Gm Chopped Almonds

50 Gm Chopped Cashews

50 Gm Chopped Walnuts

25 Gm Unsalted Pistachio

25 Gm Goond 

10 to 15 Gm Magajtari seeds (Dried Melon Seeds)

1/2 Tsp Dry Ginger Powder

1/2 Cup Desi Ghee (Prefer Homemade Ghee for Purity Purpose)

1/2 Cup Desiccated Coconut (Optional)

Method

1. Take medium size pan. Turn on gas and let it heat. Add 1/2 cup ghee into pan.


2. Add Goond into ghee once ghee is hot. 

3. Fry the Goond till into light golden color.


4. Do not fry till it becomes dark or burn. Keep aside fried Goond.

5. Now add rest of chopped dry fruits into Ghee and saute it until light golden                 brown. 


6. Keep aside all fried ingredients. Now add Dates into rest of ghee (It will be arround 2 to 3 spoon). saute the dates into ghee till it becomes smoother and into lumpy texture. Here we go...


7. Add Dry Ginger Powder once dates are nicely smooth and cooked.



8. Now, it is near to end step. Spread the dates into plate or bowl till it become cool.


9. Once Dates dough is at room temperature add all fried ingredients and mix it             well.  

10. Add Poppy Seeds as per choice. I have not included into ingredients list because         it is completely optional. 


11. Yeeyyy Its done...As per choice either we can nicely roll it and cut into piece or           either we can make small balls and rolled it into dry desiccated coconut and               serve.



12. Best part of this sweet is, it can  be store till 15 to 20 days. But fresh things                  always gives best results.  


Important Tips:

  1. Do not use inferior quality of Dates which contains sugar syrup part.
  2. Do not over cook dates into Ghee that will give chewy texture.
  3. Do not add raw dry fruits. Always saute it into Ghee first.
  4. Do not add too much Ghee.
  5. Do not add Goond while saute dates. Goond has different property which can not be over roast or fried.
  6. Cook with emotions and love...which will increase more taste...
