Peanut Chutney - How to Make Peanut Chutney?

Peanut chutney!!! Yeah today I want to share one of very very famous Indian subcontinent delicacy, The chutney which I am going to share today is basically famous at West Part of India (Rajkot,Gujarat) as Groundnuts are main agricultural product here. Again people and agriculture both walks together what they grow, its becomes main component of regional cuisine. 

Peanuts are highly nutritive, its says in India peanuts are known as "Cashews". In village there are number peanut sweets and curry variety. In village basically where Peanuts are main agricultural crop, village people used to cook many recipes with peanuts. At Gujarat (India) Peanut oil is one of best cooking oil. In India majorly peanuts are used in stuffed vegetable curry specially for stuffing along with other spices.

Peanut chutney is best condiment specially at Rajkot and rest part of Gujarat. Peanut chutney and potato crisps are most famous and most often snack at Rajkot ( Gujarat, India). But Peanut Chutney has extravagant taste, salty,sourly,spicy,astringent...which is best with any cuisine specially with Baked Bread, Bhel(Indian Mixture with puffed rice and tomato, onion, lemon and some spicy sauces). Peanut chutney is now days getting famous out of Gujarat and out of India too.

Usually I like to eat peanut chutney 365 days with potato crisps and spicy puffed rice mixture(Bhel). 

Peanut Chutney is also can have during Fasting Days (Specially during Festival Days) with Sabudana Khichdi, Sabudana Vada, Sabudana Thalipeeth and many more Fasting cuisine and also Its best option for Vegan too!!!

For once it feels How can we make chutney with Peanuts as peanuts are consider as NUTS family!!! yeah...question is there!!! But now try this recipe with very simple technique.

Self life of Chutney : 1 Week

Ingredients

100gm Peanut powder (Roasted Peanuts)
1 medium size lemon (Approx 2 Tbsp)
1/2 tsp salt ( As per taste)
1/2 tsp Turmeric Powder 
4 -5 Chilies 


Now lets see step by step how to make peanut chutney!!! Its easy and tricky!!!


For perfect peanut chutney secret is how to roast peanuts!!! If peanut will be over roast taste will be different and if peanuts are not properly roast, taste of chutney will be oily!!! So here I am sharing some tricks for Roasted Peanuts!!! 

If Microwave or OTG is available let the add 100 gm or whatever amount want to roast, add them in to Oven plate and place the plate on 180 degree for maximum 7 minutes. Kindly use both side coil, which will help peanut to get roast evenly. 


After 5 minutes, quickly check peanuts, if peanuts upper skin can be remove easily, its ready!!! Do not forget, over roasted peanuts will loss own nutty flavor. 


Remove all peanut skin nicely. Its ready for next step. 

If there is not availability of Microwave or OTG oven, Take one big pan, heat the pan at low flame. Add 3 cup salt. ( Salt is best option to roast peanuts evenly, and it can be use multiple times once used salt)


Add 1 cup peanuts in to pan. stir it continuously at medium flame. Good and perfect roast takes time. 


Once peanuts will start to roast, mean while check randomly if peanuts skin can be remove easily, turnoff flame and sieve it with siever to separate peanuts and salt. Roasting peanuts into salt, it will take around 8 to 10 minutes. Make sure peanut should not be dark from outside or inside.

Now to separate peanuts and its skin, gently smash peanuts with any hard thing like cup or small bowl to de-skin peanuts. After that slowly tossing peanuts and blow air on peanuts at open space. Keep tossing slowly and blowing the peanuts until all of the peanuts skins have been blow away. Its ready to grind. 

Add peanuts to blender, blend the peanuts and prepare coarse peanut powder. Peanut powder must not be very fine which will give peanut oil taste and texture of chutney will be as peanut paste as Peanuts have high oil content.

Peanut powder is ready for further step.

To a blender, add roughly chopped 3-4 chilies ( As per spicy taste quantity of chilly can be variate), 1/2 salt, 2 tbsp lemon juice and turmeric powder.

First grind a smooth paste of chilly. Next step is to add peanut powder into same blender with chilly paste.

Final step, once quick blend of blender to mix peanut powder and chilly, lemon, turmeric paste. if requires add 2 to 3 spoon water and blend a coarse chutney. 

To preserve this chutney for long time, do not add water at all. And instead of 2 tbsp lemon juice add 1 tbsp lemon juice and 1/4 tsp citric Acid Crystals (Nimboo Fool). Sourness can be add as per taste.

Do not use ready made salted Peanuts or unsalted roasted peanuts!!!

Peanut Chutney is ready to serve with any dishes. It has nice tangy flavor, salty, spicy, sour. Try it once for sure.
